Easy, delicious, and no recipe required. These are my three favorite ways to eat Mar Mar kelp noodles in Thai curry, and all three are great with rice on the side.
Heat and toss: Little Bee Thai Curry
Little Bee Thai Curry is made right here in Maine and sold at Rosemont Market. The panang is my personal favorite. Reheat the curry in a small pot, then add kelp noodles at the very end to bring everything up to temperature. Tip: cook your choice of protein and veg to add at the end as well- I love eggplant, broccoli, bell pepper, tofu, tempeh, or fish with this.
2. Follow the box: Uncle's Thai Green Curry Block
Made in Thailand and sold locally at Onggi and Harbor Fish Market, these curry blocks are SO easy and pack big flavor (has some spice!). Follow the directions on the box, then toss in the kelp noodles at the very end.
Takeout: Khao Soi (no cooking)
Order Khao Soi from Dok Mali or any of our fantastic Thai restaurants in town. They usually package the noodles separate of the curry sauce (but it might be worth calling to confirm). At home, warm the curry sauce and swap in Mar Mar noodles. Yum!
